Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup natural peanut butter (stirred well)
  • 1/2 cup smooth peanut butter
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1/2 cup dark chocolate chips or chopped bar (dairy-free)
  • 1 tablespoon coconut oil

Instructions

  1. Line a 9×9 inch baking pan with parchment paper, creating a sling for easy removal.
  2. In a large mixing bowl, combine the rolled oats and sea salt, stirring to distribute evenly.
  3. In a separate bowl, whisk together the natural peanut butter, smooth peanut butter, maple syrup, and vanilla extract until smooth and glossy. If the natural peanut butter is hard, microwave it briefly to soften.
  4. Pour the wet mixture over the oats and fold with a spatula until every oat is coated and the mixture is sticky.
  5. Transfer the mixture to the prepared pan and press down firmly and evenly to compact the bars.
  6. Refrigerate the base for 20-30 minutes to firm up.
  7. While the base chills, melt the dark chocolate chips and coconut oil together in 20-second intervals in the microwave or over low heat in a saucepan, stirring until smooth.
  8. Remove the pan from the fridge and drizzle or spread the melted chocolate over the chilled base.
  9. Return to the fridge for 10-15 minutes to allow the chocolate to set completely.
  10. Lift the block out of the pan using the parchment sling and slice into 12-16 bars.

Notes

Ensure natural peanut butter is stirred thoroughly before use. Press the oat mixture firmly into the pan to prevent crumbling. Chill the base before adding chocolate to prevent melting. Use certified gluten-free oats if necessary.
