  • 1 cup (240g) guacamole (fresh or store-bought)
  • 1 cup (100g) shredded sharp cheddar cheese
  • 1/2 cup sliced black olives
  • 1 cup diced tomatoes, well drained
  • 34 stalks green onions, chopped
  • Optional: Sliced jalapeños, chopped fresh cilantro, canned corn (drained)

Instructions

  1. Prep ingredients: Chop green onions, slice olives, drain and pat dry tomatoes, and grate cheese.
  2. Create the base: Break tortilla chips into a 9×9 or 8×10 inch clear glass serving dish to form an even layer.
  3. Add bean layer: Spread the warmed mashed beans evenly over the chips, pressing down slightly to adhere.
  4. Add sour cream layer: Spread the sour cream smoothly over the beans.
  5. Add guacamole layer: Gently spread guacamole over the sour cream. If making ahead, press plastic wrap directly on the surface to prevent browning.
  6. Add cheese layer: Sprinkle shredded cheese evenly over the guacamole, reserving a little for garnish.
  7. Add veggie layers: Scatter diced tomatoes, sliced olives, and chopped green onions over the cheese.
