Description

A sturdy, nutritious, and easy-to-make breakfast bar that holds its shape in lunchboxes. Made with nut butter and chia seeds for sustained energy, these bars are perfect for busy mornings.


Ingredients

  • 4 cups (100g) large marshmallows
  • 4 tablespoons (57g) unsalted butter
  • ½ cup (125g) creamy nut butter (peanut, almond, or sunflower seed)
  • 6 cups (180g) Rice Krispies cereal
  • 2 tablespoons (15g) chia seeds
  • ½ teaspoon salt
  • ½ cup (85g) dark chocolate chips (optional, for topping)
  • ½ cup (15g) extra Rice Krispies cereal (optional, for topping)

Instructions

  1. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides, and grease generously with butter or cooking spray.
  2. In a large stockpot over medium-low heat, melt the butter and nut butter together, stirring constantly until smooth. Do not let the butter brown.
  3. Add the marshmallows to the pot and stir gently but constantly until completely melted and smooth. Remove from heat immediately once smooth.
  4. Immediately add the Rice Krispies cereal, chia seeds, and salt to the pot. Fold everything together with a silicone spatula until every piece of cereal is coated.
  5. Transfer the mixture to the prepared pan. Use a greased spatula or greased hands to press the mixture down firmly and evenly into the corners.
  6. Let the bars cool at room temperature for 30 minutes, then transfer to the fridge for another 30 minutes until completely firm.
  7. Optional: Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each. Drizzle over the cooled bars and sprinkle with extra cereal if desired. Let set for 10 minutes at room temperature or 5 minutes in the fridge.
  8. Lift the bars out of the pan using the parchment overhang. Cut into squares or rectangles using a sharp knife dipped in hot water between cuts.

Notes

Press the mixture firmly to prevent crumbling. Use low heat when melting marshmallows to prevent burning. Store in the fridge for up to 1 week or freeze for up to 3 months. For nut-free schools, use sunflower seed butter. For gluten-free, use certified gluten-free Rice Krispies.
