Description
These easy 5-ingredient no-bake bars are the perfect balance of sweet peanut butter and rich chocolate with a chewy oat base. They require zero oven time, are ready in about 20 minutes of active work, and are perfect for meal prep or satisfying late-night cravings.
Ingredients
- 3 cups old-fashioned rolled oats
- 1 cup creamy peanut butter
- 1/2 cup honey
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
- Flaky sea salt (for topping)
Instructions
- Line an 8×8 inch baking pan with parchment paper or aluminum foil and spray lightly with cooking spray.
- In a medium saucepan over medium-low heat, combine peanut butter, honey, butter, and vanilla extract. Stir constantly for 3-4 minutes until smooth and glossy. Do not let it boil. Remove from heat.
- Immediately add the rolled oats to the warm mixture and stir vigorously until every oat is coated.
- Pour the mixture into the prepared pan and press down firmly and evenly using a spatula or wet hands to compact it.
- Place the pan in the freezer for 15 minutes to firm up the base.
- While the base chills, melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Remove the pan from the freezer and pour the melted chocolate over the chilled base. Spread evenly.
- Drizzle with extra peanut butter if desired and sprinkle with flaky sea salt.
- Return the pan to the freezer for 30 minutes or the fridge for 1 hour until completely firm.
- Lift the bars out of the pan using the overhang and cut into squares or rectangles.
Notes
Do not use instant oats or steel-cut oats; old-fashioned rolled oats are required for the correct texture. Ensure peanut butter is standard creamy (not natural separated oil) for proper binding. If using maple syrup instead of honey, chill bars longer as they will be softer. Bars keep in the fridge for two weeks or freezer for three months.
