Description

A creamy, dairy-free ice cream made with full-fat coconut milk and salted caramel sauce. This no-churn recipe requires no ice cream maker and takes only 5 minutes of active prep time.


Ingredients

  • 2 cans (400g each) full-fat coconut milk, chilled overnight
  • 1 cup (240ml) salted caramel sauce
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) extra caramel sauce for swirling
  • Pinch of flaky sea salt for topping

Instructions

  1. Chill the cans of full-fat coconut milk in the refrigerator overnight without shaking them to allow the cream to separate.
  2. Open the chilled cans and scoop only the solid white cream into a large mixing bowl, discarding the watery liquid at the bottom.
  3. Using an electric hand mixer or stand mixer, whip the coconut cream on high speed for 2-3 minutes until light and fluffy.
  4. Add the vanilla extract and 1 cup of salted caramel sauce to the whipped cream, gently folding them in with a spatula to maintain airiness.
  5. Spoon half of the mixture into an 8×4 inch loaf pan. Drizzle with half of the remaining caramel sauce.
  6. Add the rest of the mixture on top and drizzle with the remaining caramel sauce.
  7. Use a knife to gently swirl the caramel into the mixture and sprinkle with flaky sea salt.
  8. Cover the pan tightly with plastic wrap or a lid and freeze for at least 6 hours or overnight.
  9. Let the ice cream sit at room temperature for 5-10 minutes before scooping to soften slightly.

Notes

Ensure you use full-fat coconut milk, not light milk or coconut water, for the correct texture. Chill the coconut milk overnight to separate the cream. Do not shake the cans before opening. If the ice cream is too hard, let it sit at room temperature for 10 minutes before serving. For a softer texture, add a tablespoon of vodka before freezing.
