Instructions

  1. Cream the butter and 1 ½ cups of granulated sugar in a large mixing bowl using an electric mixer on medium-high speed for 3-4 minutes until light, fluffy, and pale. Scrape down the sides.
  2. Beat in the eggs one at a time, followed by the vanilla extract, mixing until just combined and smooth.
  3. In a separate medium bowl, whisk together the flour, cream of tartar, baking soda, and ½ teaspoon salt.
  4. With the mixer on low speed, gradually add the dry ingredients to the wet ingredients. Mix until just combined; do not overmix.
  5. Cover the dough and refrigerate for at least 30 minutes (up to 24 hours) to solidify the fat and prevent excessive spreading.
  6. Preheat oven to 375°F (190°C). In a small bowl, mix the remaining ½ cup sugar with the cinnamon.
  7. Roll the chilled dough into 1.5-tablespoon balls and coat generously in the cinnamon sugar mixture.
  8. Place cookies on parchment-lined baking sheets, 2 inches apart.
