  • 1 can black beans, drained, rinsed, and patted dry
  • 2 tablespoons butter or olive oil, melted
  • Salsa or pico de gallo (optional, for serving)

Instructions

  1. Preheat oven to 375°F (190°C). Line two large baking sheets with parchment paper.
  2. Prepare fillings: Cook sausage and sauté vegetables until soft. Let cool completely to prevent premature melting.
  3. Assemble: Lay a tortilla flat. Place a layer of cheese, then fillings, then another layer of cheese on top. Fold tortilla in half and press edges to seal.
  4. Brush the top of each quesadilla with melted butter or oil.
  5. Place quesadillas on baking sheets, ensuring they are not touching.
  6. Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
  7. Cool on the pan for 2-3 minutes to let cheese set.
  8. Cut each half into two triangles using a pizza cutter or sharp knife.
