Description

A convenient, batch-prepped vegan cold brew coffee infused with pumpkin puree and spices, topped with a rich, homemade coconut cream foam. Perfect for meal prep and lasting up to four days in the fridge.


Ingredients

  • 2 cups (480ml) cold brew coffee concentrate
  • 1 cup (240ml) water
  • ¼ cup (60g) unsweetened pumpkin puree
  • 3 tablespoons maple syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • ½ can full-fat coconut milk (canned), thick cream only
  • 1 tablespoon maple syrup (for foam)
  • ½ teaspoon pumpkin pie spice (for foam)
  • ¼ teaspoon vanilla extract (optional, for foam)

Instructions

  1. In a large pitcher, combine the cold brew concentrate and water. Stir well.
  2. Add the pumpkin puree, 3 tablespoons maple syrup, pumpkin pie spice, and vanilla extract to the pitcher.
  3. Whisk vigorously until the mixture is smooth and fully incorporated with no lumps.
  4. Divide the cold brew mixture evenly among four 16 oz bottles, filling each about ¾ full.
  5. Cap the bottles tightly and give them a gentle shake to distribute spices. Refrigerate immediately.
  6. When ready to serve, scoop the thick coconut cream from a chilled can of full-fat coconut milk into a small bowl.
  7. Add 1 tablespoon maple syrup and ½ teaspoon pumpkin pie spice to the coconut cream.
  8. Whisk vigorously for 2-3 minutes until the foam is light, fluffy, and holds soft peaks.
  9. Shake the chilled cold brew bottle well.
  10. Slowly pour the coconut foam over the back of a spoon onto the surface of the coffee.
  11. Garnish with a pinch of extra pumpkin spice and serve immediately.

Notes

Ensure you use full-fat canned coconut milk that has been refrigerated overnight so the cream separates and rises to the top. Do not use carton coconut milk beverage. The cold brew base keeps for up to 4 days in the fridge. The coconut foam should be made fresh before serving as it separates if stored. If the foam is too runny, ensure you only scooped the solid cream from the top of the can.
