Ultra-Rich Chocolate Ganache Tart with Salty Pretzel Crust

Description

A no-bake dessert featuring a crunchy, salty pretzel crust and a glossy, rich chocolate ganache filling. This foolproof tart is perfect for impressing guests and can be made ahead of time.


Ingredients

  • 2 cups (about 150g) salted pretzel sticks or pieces
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • Pinch of sea salt (optional)
  • 12 ounces (340g) semi-sweet chocolate chips or chopped chocolate bar
  • 1 cup (240ml) heavy cream
  • 2 tablespoons (30g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Flaky sea salt (for topping)

Instructions

  1. Crush pretzels into fine crumbs using a food processor or a rolling pin in a ziplock bag.
  2. In a medium bowl, mix pretzel crumbs, melted butter, sugar, and optional pinch of salt until it resembles wet sand.
  3. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Refrigerate while making the ganache.
  4. Heat heavy cream in a medium saucepan over medium-low heat until steaming and just about to simmer (do not boil). Remove from heat.
  5. Place chocolate in a heatproof mixing bowl. Pour hot cream over chocolate and let sit undisturbed for 5 minutes.
  6. Stir gently from the center outwards until the mixture is smooth, glossy, and uniform.
  7. Stir in 2 tablespoons of softened butter and vanilla extract until fully incorporated.
  8. Pour warm ganache into the prepared crust and smooth the top. Tap the pan to release air bubbles.
  9. Refrigerate for at least 4 hours, preferably overnight, until the ganache is firm.
  10. Remove from fridge, release the springform ring, sprinkle with flaky sea salt, and slice with a hot knife.

Notes

For best results, chop chocolate evenly and do not skip the 5-minute resting time for the ganache. The tart tastes better the next day. Store in the refrigerator for up to 5 days or freeze for up to 2 months.
