Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
- Shred the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels until dry.
- In a small bowl, whisk together the softened cream cheese, powdered sugar, and milk until smooth and creamy. Set aside.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (2-3 minutes with mixer).
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed or stirring by hand until just combined.
- Fold in the shredded zucchini and optional mini chocolate chips.
- Pour half of the batter into the prepared pan. Drop spoonfuls of the cream cheese mixture over the batter and swirl gently with a knife.
- Pour the remaining batter on top and smooth it out. Add more dollops of cream cheese on top if desired.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs. Tent with foil if browning too quickly.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
