  • 4 cups (1 liter) water
  • 45 medium fresh lemons (yielding about 1 cup juice)
  • 1 teaspoon lemon zest (optional)
  • 1/8 teaspoon salt
  • Natural sweetener to taste (e.g., stevia, monk fruit, or erythritol, optional)
  • Ice cubes (hibiscus ice cubes recommended)
  • Fresh mint leaves for garnish (optional)
  • Lemon wheels for garnish (optional)

Instructions

  1. Boil 4 cups of water. Remove from heat and pour over dried hibiscus flowers in a large heatproof pitcher.
  2. Stir to submerge flowers, cover, and steep for 15-20 minutes. Do not steep longer than 20 minutes to avoid bitterness.
  3. Strain the liquid through a fine-mesh strainer or cheesecloth-lined strainer into a clean bowl or jug. Press gently on flowers to extract juice but do not squeeze hard to avoid tannins.
  4. Let the hibiscus concentrate cool to room temperature, then refrigerate to speed up cooling.
  5. Roll lemons on the counter to soften, cut in half, and juice to yield about 1 cup of fresh lemon juice.
  6. Combine the cooled hibiscus tea and fresh lemon juice in a pitcher.
  7. Add the pinch of salt and optional sweetener. Stir well.
  8. Taste and adjust: add more sweetener if too tart, or more lemon juice if too weak.
  9. Fill glasses with ice cubes and pour the hibiscus lemonade over the ice.
  10. Garnish with lemon slices and mint sprigs. Serve immediately.

For a smoother flavor, try cold-brewing the hibiscus in the fridge overnight. A tiny pinch of salt enhances the citrus and balances tartness without making it salty. Use high-quality, bright red hibiscus flowers for the best color and flavor.
