  • 1 can (400ml) full-fat canned coconut milk
  • 23 tablespoons powdered erythritol or monk fruit blend
  • 23 tablespoons unsweetened cocoa powder (Dutch-processed preferred)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 24 tablespoons unsweetened almond milk (optional, for thinning)
  • 1 scoop protein powder (optional)
  • 1 tablespoon sugar-free dark chocolate chips (optional)

Instructions

  1. In a medium mixing bowl, combine the canned coconut milk, sweetener, vanilla extract, and salt. Whisk vigorously until the sweetener is completely dissolved.
  2. Sift in the cocoa powder and whisk until the mixture is a smooth, rich dark brown with no streaks.
  3. Add the chia seeds to the chocolate mixture. Stir immediately and thoroughly for at least 30 seconds to a minute to ensure every seed is coated and no clumps form.
  4. Let the mixture sit for 5 minutes, then stir again to break up any clumps that formed while the seeds started to gel.
  5. Cover the bowl with plastic wrap or divide the mixture into individual jars/mason jars.
  6. Refrigerate for at least 4 hours, or preferably overnight, until the pudding is thick and gel-like.
  7. Stir well before serving. Add a splash of almond milk if too thick. Top with berries, coconut whipped cream, or chocolate chips as desired.

Notes

Use full-fat canned coconut milk for the best creamy texture; do not use light coconut milk or carton beverages. Sift cocoa powder to prevent clumps. Stirring twice (once initially, once after 5 minutes) is crucial to prevent chia seed clumping. This pudding keeps in the fridge for up to 5 days. It does not freeze well.
