Instructions
- In a small saucepan, combine maple syrup, 2 tablespoons butter, and 1 teaspoon ground cinnamon. Heat over medium-low heat until butter melts and cinnamon dissolves. Keep warm.
- In a shallow baking dish, whisk together eggs, milk, heavy cream, vanilla extract, and 1 teaspoon cinnamon until uniform and frothy.
- Place a large skillet over medium heat and add 1 tablespoon butter. Let it melt and foam until it gently bubbles.
- Dip slices of stale sourdough into the egg mixture for about 30 seconds per side, allowing absorption but preventing sogginess. Let excess drip off.
- Place dipped bread in the hot skillet. Cook for 3-4 minutes per side until deeply golden brown and crispy. The inside should be custardy.
- Transfer toast to plates and drizzle generously with the warm maple cinnamon syrup. Serve immediately with optional toppings.
Notes
Stale bread is essential to prevent mushiness. If using fresh bread, toast slices lightly in the oven at 350°F for 5 minutes to dry them out. Cook on medium heat to ensure the inside cooks through without burning the outside. Wipe the pan between batches if making a large quantity.
