Description

Soft, chewy cookies stuffed with a whole Oreo and mixed with crushed Oreo crumbs for extra texture. A quick, stress-free dessert that takes less than 20 minutes of active time.


Ingredients

  • 1/2 cup (115g) unsalted butter, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (115g) packed brown sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 package (15 cookies) Oreos, crushed into fine crumbs
  • 1012 whole Oreos (standard size) for filling

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Crush half of the Oreos (about 10-12 cookies) into fine crumbs using a rolling pin or hands. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until pale, fluffy, and creamy (about 2-3 minutes with a mixer).
  4. Beat in the egg and vanilla extract until just combined and smooth.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Add the dry ingredients and crushed Oreo crumbs to the wet mixture. Mix on low speed or stir by hand until just combined. Do not overmix.
  7. Scoop about 2 tablespoons of dough and flatten into a disc in your palm.
  8. Place one whole Oreo in the center of the dough disc.
  9. Fold the dough up and around the Oreo, pinching the seams to seal completely. Roll into a ball.
  10. Place the stuffed cookie balls on the prepared baking sheets, leaving 2 inches between each.
  11. Bake for 10-12 minutes until edges are set but centers are still soft.
  12. Let cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack or serving warm.

Notes

Do not overbake; the centers should look soft as they firm up while cooling. For best results, use room temperature butter. You can freeze raw dough balls for up to 3 months and bake straight from frozen, adding 1-2 minutes to bake time. Store in an airtight container at room temperature for up to 3 days.
