  • 2 packets active dry yeast (14g)
  • 3 tablespoons honey
  • ½ cup warm milk
  • 3 to cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 4 tablespoons unsalted butter (for glaze)
  • 2 tablespoons extra honey (for glaze)
  • Pinch of salt (for glaze)
  • Sesame seeds (optional, for garnish)

Instructions

  1. In a large bowl, combine warm water, warm milk, honey, and yeast. Whisk until dissolved and let sit for 5-10 minutes until foamy.
  2. Add salt and vegetable oil to the yeast mixture. Stir to combine.
  3. Add flour one cup at a time, mixing with a wooden spoon or hands. Stop when the dough pulls away from the sides but is still slightly tacky.
  4. Lightly grease a clean bowl with oil, place the dough inside, turn to coat, cover with a damp towel or plastic wrap, and let rise for 20-30 minutes until puffy.
  5. Preheat oven to 375°F (190°C). Grease a 9×9 inch baking pan.
  6. Punch down the risen dough gently. Turn out onto a lightly floured surface and press into a rough rectangle.
  7. Cut dough into 12 equal pieces. Roll each into a smooth ball and place in the baking pan, leaving space between them.
  8. Cover the pan with a towel and let rolls rise for another 15 minutes until puffy and touching.
  9. Bake for 15-18 minutes until golden brown. Tap the top; it should sound hollow.
  10. While baking, mix melted butter, extra honey, and a pinch of salt for the glaze.
  11. Immediately upon removing from oven, brush the glaze generously over the hot rolls. Sprinkle with sesame seeds if using.
  12. Let cool in the pan for 5 minutes before serving.

Notes

Ensure water is warm (bath temperature) but not hot to avoid killing the yeast. Do not over-flour the dough; it should be soft and slightly sticky. For best results, brush the glaze on while rolls are still hot. Store leftovers in an airtight container at room temperature for up to 2 days.
