Description
A tender, juicy brisket cooked low and slow in a slow cooker with a smoky dry rub, delivering restaurant-quality Texas BBQ flavor without the need for a smoker.

- 2 tablespoons smoked paprika
- 2 tablespoons brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon cayenne pepper
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 3–5 pounds beef brisket (flat cut preferred)
- 1 cup beef broth (low-sodium)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 large yellow onion, sliced
- 4 garlic cloves, smashed
Instructions
- In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, cayenne, salt, and black pepper. Mix well.
- Pat the brisket dry with paper towels and trim excess fat, leaving about ¼ inch layer.
- Generously rub the spice mixture all over the brisket, pressing it in to adhere.
- Slice half of the yellow onion and place it on the bottom of the slow cooker.
- Place the rubbed brisket on top of the onions.
- Pour beef broth, Worcestershire sauce, and apple cider vinegar around the brisket (do not pour directly over the rub).
- Scatter smashed garlic cloves and remaining sliced onions around the brisket.
- Cover and cook on LOW for 8-10 hours until fork-tender.
- Remove brisket from slow cooker and let rest for at least 20 minutes.
- Slice the brisket against the grain into ¼ inch thick slices.
- Serve with cooking juices or desired BBQ sauce.
Notes
Trim fat to ¼ inch for best results. Do not cook on HIGH as it may result in tough meat. Resting the meat for 20 minutes is crucial to retain juices. Slice against the grain for maximum tenderness. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
