  • 2 tablespoons cold water (for cornstarch slurry)

Instructions

  1. Trim any silver skin from the pork tenderloins and pat them dry. Place them in the slow cooker in a single layer.
  2. In a small bowl, whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil until the honey is mostly dissolved.
  3. Pour the glaze over the pork in the slow cooker, brushing some onto the top of the meat.
  4. Cook on LOW for 4-5 hours (or HIGH for 2-3 hours if running late, though LOW is recommended for tenderness).
  5. About 15 minutes before serving, mix cornstarch with 2 tablespoons of cold water to create a smooth slurry.
  6. Pour the slurry into the slow cooker, stir gently, and cook for another 15 minutes until the sauce thickens into a glossy glaze.
  7. Remove pork from the slow cooker and let it rest on a cutting board for 5 minutes.
  8. Slice the tenderloins into half-inch medallions.
  9. Serve immediately, spooning extra glaze over the top and garnishing with green onions and black sesame seeds.

Notes

Do not overcook the pork; it is lean and can become dry if cooked too long. Aim for an internal temperature of 145°F. Trim the silver skin for better texture. For a spicy version, add chili crisp or sriracha. You can cook frozen tenderloins by adding 1-2 hours to the cooking time.
