Slow Cooker Beef and Broccoli: 5pm Dinner Solved

  • Author: Lisa
  • Total Time: 4 hours 15 minutes
  • Yield: 4 servings 1x

Description

A quick and easy slow cooker meal that tastes better than takeout. This recipe uses flank steak and fresh broccoli with a savory sauce, requiring only 15 minutes of prep time for a tender, flavorful dinner.

Ingredients

Scale
  • 2 pounds flank steak, sliced against the grain
  • 2 large heads broccoli, cut into bite-sized florets
  • 6 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup soy sauce (low-sodium recommended)
  • 1/4 cup beef broth
  • 2 tablespoons oyster sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the flank steak dry and slice it against the grain into thin strips.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear beef strips in batches for 1-2 minutes per side until browned. (Optional but recommended).
  3. In a small bowl, whisk together soy sauce, beef broth, oyster sauce, honey, minced garlic, and grated ginger.
  4. Pour the sauce mixture over the seared beef and stir to coat.
  5. Transfer beef and sauce to a 4-6 quart slow cooker. Cover and cook on LOW for 4-6 hours.
  6. About 30 minutes before serving, add broccoli florets to the slow cooker. Cover and cook on HIGH for 30 minutes until broccoli is tender-crisp.
  7. Stir the cornstarch slurry into the slow cooker. Cover and cook on HIGH for another 10-15 minutes until the sauce thickens.
  8. Turn off the slow cooker. Drizzle with sesame oil and sprinkle with red pepper flakes if using. Serve over steamed rice or noodles.

Notes

Slice beef against the grain for tenderness. Add broccoli in the last 30 minutes to prevent mushiness. Use low-sodium soy sauce to control saltiness. Sesame oil should be added at the end to preserve flavor. This recipe does not freeze well.
