Description

A quick and easy weeknight dinner using rotisserie chicken, ready in just 15 minutes of active time. These cheesy, saucy enchiladas are perfect for busy families and require minimal prep work.


Ingredients

  • 2 cups (300g) rotisserie chicken, shredded
  • 2 cups (200g) shredded Mexican blend cheese, divided
  • 1 medium yellow onion, diced
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups (480ml) enchilada sauce (one 15oz jar)
  • 1/2 cup (120ml) milk or chicken broth
  • 810 large flour tortillas (10-inch)
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños, avocado slices

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine shredded chicken, diced onion, cumin, garlic powder, salt, and pepper. Mix well.
  3. In a separate bowl or measuring cup, whisk together enchilada sauce and milk (or broth) until smooth.
  4. Lay a tortilla flat, add about 1/4 cup of chicken mixture and 1 tablespoon of cheese to the center.
  5. Roll the tortilla tightly and place seam-side down in the baking dish. Repeat with remaining tortillas.
  6. Pour the thinned enchilada sauce evenly over the rolled enchiladas.
  7. Sprinkle the remaining shredded cheese on top.
  8. Cover loosely with aluminum foil and bake for 15 minutes.
  9. Remove foil and bake for another 5 minutes, or until cheese is bubbly and slightly browned.
  10. Let cool for 5 minutes before serving.

Notes

For best results, warm tortillas in the microwave or skillet before rolling to prevent cracking. If using corn tortillas for a gluten-free version, warming is essential. Leftovers can be stored in the fridge for up to 4 days or frozen unbaked for up to 3 months.
