Paleo Coconut Flour Chocolate Chip Cookies: 5-Ingredient Grain-Free Recipe

  • Author: Lisa
  • Total Time: 15 minutes
  • Yield: 12 cookies 1x

Description

These paleo coconut flour chocolate chip cookies are a simple, grain-free, and dairy-free treat that delivers chewy centers and crisp edges. Made with just five core ingredients, they are naturally gluten-free, low-carb, and ready in about 15 minutes.

Ingredients

Scale
  • 1/2 cup (60g) fine-milled coconut flour
  • 3 large eggs, room temperature
  • 1/4 cup (60ml) melted coconut oil
  • 1/4 cup (60ml) maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup (85g) dairy-free chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the melted coconut oil and maple syrup until smooth.
  3. Whisk in the eggs one at a time, ensuring each is fully incorporated before adding the next to prevent scrambling.
  4. In a separate bowl, whisk together the coconut flour, baking soda, and salt until no lumps remain.
  5. Pour the dry ingredients into the wet ingredients and stir with a spatula until just combined. The batter will be thick and sticky.
  6. Let the batter rest for 5 minutes to allow the coconut flour to absorb liquid.
  7. Fold in the chocolate chips gently.
  8. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them 2 inches apart.
  9. Gently press the dough balls down with a fork or fingers to help them bake evenly.
  10. Bake for 8-10 minutes until the edges are golden brown but centers still look slightly soft.
  11. Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Coconut flour is highly absorbent, so measure it carefully using the spoon-and-level method. Do not substitute almond flour as it absorbs liquid differently. Let the batter rest for 5 minutes before baking to ensure proper hydration. Cookies are fragile when hot, so allow them to cool completely on the pan before moving to avoid breaking. For extra flavor, add a pinch of cinnamon or flaky sea salt on top after baking.
