Description

An easy, stress-free breakfast casserole made with refrigerated cinnamon rolls soaked in a rich egg custard and baked until golden. Perfect for brunches and feeding a crowd with minimal morning effort.

Ingredients

Scale
  • 2 tubes (16 rolls total) refrigerated cinnamon rolls
  • 1/2 cup (113g) unsalted butter, melted
  • 6 large eggs
  • 1 cup (240ml) heavy cream
  • 1 cup (240ml) whole milk
  • 2 teaspoons vanilla extract
  • 1/2 cup (100g) packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 oz (113g) cream cheese, softened (for glaze)
  • 1/2 cup (60g) powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Grease a 9×13 baking dish with butter or non-stick spray.
  2. Open the cinnamon rolls and separate them. Cut each roll into quarters and arrange them in a single layer in the prepared baking dish.
  3. In a large mixing bowl, whisk together eggs, heavy cream, milk, vanilla extract, brown sugar, cinnamon, and salt until the sugar is dissolved and the mixture is uniform.
  4. Pour the custard mixture evenly over the cinnamon roll pieces, ensuring all pieces are coated. Gently press down on any dry spots.
  5. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate overnight (8-12 hours).
  6. Preheat oven to 350°F (175°C). Let the casserole sit at room temperature for 20 minutes before baking.
  7. Bake for 45-50 minutes until the top is golden brown and puffed, and a knife inserted in the center comes out clean.
  8. While baking, mix softened cream cheese, powdered sugar, 2-3 tablespoons milk, and 1/2 teaspoon vanilla until smooth to create the glaze.
  9. Let the casserole cool for 5-10 minutes after removing from the oven.
  10. Drizzle the cream cheese glaze over the warm casserole and serve.

Notes

Ensure the cinnamon rolls are fully soaked in the custard overnight for the best texture. If the top browns too quickly, tent with foil. For a dairy-free version, use dairy-free cinnamon rolls, coconut milk, and dairy-free cream cheese. Leftovers can be stored in the fridge for up to 3 days.
