- ½ cup granulated sugar (for filling)
- 2 tablespoons cornstarch

- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour

- ½ cup heavy cream

- 1 tablespoon granulated sugar (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C).
- Peel, pit, and slice peaches into ½-inch thick wedges.
- In a large bowl, toss sliced peaches with ½ cup sugar, cornstarch, lemon juice, cinnamon, nutmeg, and vanilla. Let sit for 10 minutes to macerate.
- Transfer the peach mixture to a 9×9 inch baking dish and spread evenly.
- In a medium bowl, whisk together flour, baking powder, and salt.
- Add cold, cubed butter to the flour mixture and work it in with a fork or fingers until it resembles coarse crumbs with pea-sized butter pieces.
- Pour in heavy cream and gently stir until the dough just comes together (do not overmix).
- Drop large spoonfuls of biscuit dough over the peach mixture, leaving gaps for bubbling. Gently pat down.
- Brush the top of the biscuits with melted butter and sprinkle with optional sugar.
- Bake for 40-45 minutes until the topping is golden brown and the fruit filling is bubbling vigorously.
- Let cool for at least 15 minutes before serving to allow the filling to thicken.
Notes
Keep butter cold for flaky biscuits. Let peaches rest with sugar to release juices. Do not overmix the dough. Serve warm with vanilla ice cream. Leftovers keep in the fridge for 3 days; reheat in oven to crisp topping.
