Instructions
- Proof the yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
- Mix the dough: Add melted butter and salt to the yeast mixture. Gradually add flour, stirring until thick, then knead by hand for 5 minutes until smooth and elastic.
- First rise: Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
- Make the beer cheese: While dough rises, combine beer, cream cheese, and Dijon mustard in a small saucepan over low heat. Stir until smooth. Add garlic, Worcestershire sauce, and hot sauce. Gradually add cheddar cheese, stirring until melted. Adjust consistency with heavy cream if needed. Keep warm.
- Shape the bites: Punch down risen dough. Divide into two parts. Roll each into a 1-inch thick rope and cut into 1-inch pieces. Place on a parchment-lined baking sheet.
- Second rise: Cover bites loosely and let rise for 15-20 minutes.
- Boil: Preheat oven to 425°F (220°C). Bring a large pot of water to a boil with 1 tablespoon baking soda. Drop bites in batches for 30 seconds each. Remove with a slotted spoon.
