Description
A reliable, two-step method for cooking juicy bratwurst by poaching them in beer and onions before searing, topped with sweet caramelized onions and served on brioche or pretzel buns.

- 6–8 bratwurst links (1.5 lbs / 680g), preferably pork or pork-beef blend
- 1 bottle (12 oz / 355ml) lager or pilsner beer
- 2 large yellow onions, sliced (divided)
- 1 cup water
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 2 teaspoons Dijon mustard
- 2 tablespoons whole grain mustard
- 6–8 brioche or pretzel buns
- Relish, optional
Instructions
- Slice the onions into two piles: one for the poaching liquid and one for the caramelized topping. Mince the garlic.
- In a large skillet or Dutch oven, combine the beer, water, and half of the sliced onions. Bring to a simmer over medium heat.
- Gently add the bratwurst links to the simmering liquid, ensuring they are submerged. Cover and simmer for 15-20 minutes. Remove brats and set aside, reserving the liquid.
- In the same skillet (or a separate one), melt butter over medium-low heat. Add the remaining sliced onions.
- Cook onions slowly for 20-25 minutes, stirring every 5 minutes, until deep golden brown. Add brown sugar and garlic halfway through.
- Stir in Dijon mustard at the end. If onions stick, add a splash of reserved poaching liquid.
- Heat a grill or grill pan over medium-high heat. Sear the poached brats for 2-3 minutes per side until char marks appear and casing is crisp.
- Toast buns lightly. Assemble by placing a brat in each bun, topping generously with caramelized onions, and adding whole grain mustard and relish.
Notes
Do not prick the sausages to keep them juicy. Use low heat for caramelizing onions to prevent burning. The poaching liquid can be used to deglaze the pan or moisten onions. For gluten-free, use GF brats and buns. For dairy-free, substitute butter with olive oil.
