  • 1/2 cup (120ml) sour cream
  • 2 tablespoons mayonnaise
  • 1 can (15 oz) whole kernel corn, drained and rinsed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1 tablespoon fresh lime juice
  • 1/2 cup (50g) cotija cheese, crumbled (or feta)
  • 2 tablespoons chopped chives or green onions
  • Optional: Minced jalapeños, fresh cilantro, or hot sauce

Instructions

  1. Drain the canned corn thoroughly in a colander, rinsing with cold water to remove starch, and shake or pat dry to ensure no excess moisture remains.
  2. In a medium mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix with an electric mixer or whisk until smooth and creamy with no lumps.
  3. Add the smoked paprika, garlic powder, chili powder, and lime juice to the cream cheese mixture. Mix until evenly distributed and taste to adjust seasoning if needed.
  4. Gently fold in the crumbled cotija (or feta) cheese and the drained corn using a spatula, being careful not to mash the corn kernels.
  5. Transfer the dip to a serving dish, garnish with chopped chives or green onions and extra cotija if desired.
  6. Serve immediately with sturdy tortilla chips.

Notes

Ensure the corn is drained very well to prevent a watery dip. Use room temperature cream cheese for easier mixing. This dip can be made up to 2 days ahead and stored in the fridge; let it sit at room temperature for 15 minutes before serving. Do not freeze as the dairy may separate.
