Description
A quick and flavorful weeknight meal featuring jumbo shrimp, burst cherry tomatoes, and creamy feta cheese cooked in one skillet with garlic, lemon, and herbs.

- 1.5 lbs jumbo or extra-large shrimp, peeled and deveined
- 4–5 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 2 cups cherry or grape tomatoes, halved
- 1 small red onion, thinly sliced
- ½ cup crumbled feta cheese
- 1 large lemon (zest and juice)
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Thaw frozen shrimp under cold water if necessary, then pat them very dry with paper towels. Season lightly with salt and pepper.
- Heat a large skillet over medium-high heat with 1 tablespoon of olive oil. Sear shrimp in a single layer for 1-2 minutes per side until pink and opaque. Remove shrimp from pan and set aside on a plate.
- Reduce heat to medium. Add remaining 1 tablespoon of olive oil to the pan. Sauté red onion for 2 minutes until softened.
- Add minced garlic and red pepper flakes. Cook for 30 seconds until fragrant, stirring constantly to prevent burning.
- Add halved tomatoes and dried oregano. Cook for 2-3 minutes, tossing occasionally, until tomatoes start to burst and soften.
- Return shrimp and any accumulated juices to the pan. Toss gently and cook for 1 minute to warm through.
- Remove pan from heat. Sprinkle feta cheese over the top, add lemon zest, and drizzle with fresh lemon juice. Toss once more to melt the cheese slightly.
- Serve immediately, optionally garnished with fresh parsley.
Notes
Pat shrimp dry to ensure proper searing. Remove from heat before adding feta to prevent it from becoming grainy. Do not overcrowd the pan when searing shrimp. Leftovers can be stored in the fridge for up to 3 days; reheat gently in a skillet over low heat.
