Description

A quick, no-cook Mediterranean chickpea salad that comes together in 10 minutes using simple pantry ingredients like chickpeas, feta, cucumber, and olives.


Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 medium red onion, finely diced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Drain and rinse the chickpeas thoroughly in a colander to remove excess sodium and metallic taste. Shake to remove excess water and set aside.
  2. Dice the cucumber into bite-sized pieces, halve the cherry tomatoes, and finely dice the red onion. If the onion is too pungent, soak it in cold water for 5 minutes.
  3. In a small bowl or jar, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until emulsified.
  4. In a large mixing bowl, combine the drained chickpeas, cucumber, tomatoes, red onion, and olives.
  5. Pour the dressing over the vegetable mixture and toss gently but thoroughly to coat everything.
  6. Crumble the feta cheese over the top and sprinkle with chopped parsley. Toss one final time.
  7. Serve immediately or refrigerate for 15-30 minutes to allow flavors to meld.

Notes

Rinsing the chickpeas is crucial for texture and taste. Use good quality extra virgin olive oil as it is a main flavor component. Crumble your own feta for better texture than pre-crumbled versions. The salad tastes better after resting in the fridge for 15-30 minutes. Do not freeze this salad as vegetables will become mushy.
