- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 large English cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 medium red onion, finely diced
- 1/2 cup crumbled feta cheese
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh flat-leaf parsley, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Drain and rinse the chickpeas thoroughly in a colander to remove excess sodium and metallic taste. Shake to remove excess water and set aside.
- Dice the cucumber into bite-sized pieces, halve the cherry tomatoes, and finely dice the red onion. If the onion is too pungent, soak it in cold water for 5 minutes.
- In a small bowl or jar, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until emulsified.
- In a large mixing bowl, combine the drained chickpeas, cucumber, tomatoes, red onion, and olives.
- Pour the dressing over the vegetable mixture and toss gently but thoroughly to coat everything.
- Crumble the feta cheese over the top and sprinkle with chopped parsley. Toss one final time.
- Serve immediately or refrigerate for 15-30 minutes to allow flavors to meld.
Notes
Rinsing the chickpeas is crucial for texture and taste. Use good quality extra virgin olive oil as it is a main flavor component. Crumble your own feta for better texture than pre-crumbled versions. The salad tastes better after resting in the fridge for 15-30 minutes. Do not freeze this salad as vegetables will become mushy.
