Description

A quick, one-pan weeknight dinner featuring juicy chicken thighs, briny Kalamata olives, and creamy feta cheese, finished with lemon and oregano.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup low-sodium chicken broth
  • 1 large lemon (juice of half for cooking, zest of whole for finishing)
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides generously with salt, pepper, and half of the dried oregano.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for 4-5 minutes per side until golden brown, then remove to a plate.
  3. Reduce heat to medium. Add minced garlic to the pan and cook for 30-60 seconds until fragrant.
  4. Pour in chicken broth and lemon juice, scraping up brown bits from the bottom. Simmer for 2 minutes.
  5. Add olives and red pepper flakes, stirring to combine.
  6. Return chicken to the pan, nestling into the sauce. Cover and simmer on medium-low for 5-7 minutes until internal temperature reaches 165°F.
  7. Remove lid, sprinkle feta cheese and lemon zest over the chicken. Cover and let sit for 1-2 minutes until feta softens.
  8. Remove from heat, sprinkle with fresh parsley, and serve immediately with crusty bread or couscous.

Notes

Dry the chicken thoroughly before searing to ensure a good crust. Olives and feta are salty, so taste before adding extra salt. Feta can become grainy if reheated, so this dish is best fresh or stored in the fridge for up to 4 days. Do not freeze as the feta will separate.
