- 2 large or 4 small boneless, skinless chicken breasts or thighs (about 1.5 lbs / 680g)
- ½ cup (60g) all-purpose flour (or gluten-free flour)
- 1 teaspoon Italian seasoning

- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup (240ml) low-sodium chicken broth
- 1 cup (240ml) heavy cream
- ½ cup (75g) sun-dried tomatoes packed in oil, chopped
- ½ cup (50g) freshly grated Parmesan cheese
- ½ teaspoon red pepper flakes (optional)
- ¼ cup fresh basil, chopped (for garnish)
Instructions
- Pat chicken dry and season both sides with salt, pepper, and Italian seasoning. Lightly dust with flour, shaking off excess.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove chicken to a plate and set aside.
- Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
- Pour in chicken broth to deglaze the pan, scraping up brown bits. Simmer for 1-2 minutes.
- Stir in heavy cream, sun-dried tomatoes, and red pepper flakes. Simmer gently for 3-4 minutes until the sauce begins to thicken.
- Nestle the chicken back into the skillet, spooning sauce over the top. Cover and simmer on low for 5-7 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Remove pan from heat. Stir in Parmesan cheese until melted and smooth. Adjust seasoning if needed.
- Garnish with fresh basil and serve immediately over pasta, rice, or with crusty bread.
Notes
Do not skip searing the chicken for better flavor. Use fresh Parmesan rather than pre-grated to ensure a smooth sauce. Keep heat low when adding cheese to prevent graininess. This dish does not freeze well due to the dairy content. Store leftovers in the fridge for up to 4 days.
