- 2 cups (200g) super-fine blanched almond flour
- 8 oz (225g) full-fat cream cheese, softened to room temperature
- 3 large eggs, room temperature
- ¼ cup (56g) unsalted butter, melted
- ½ cup (100g) granulated erythritol or monk fruit sweetener
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon pure vanilla extract
- ½ cup (80g) sugar-free chocolate chips
- Extra chocolate chips for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with liners or grease lightly.
- In a medium bowl, whisk together almond flour, baking powder, and salt until no lumps remain.
- In a separate large bowl, beat softened cream cheese until smooth. Add melted butter, eggs, sweetener, and vanilla extract. Whisk until the mixture is creamy and lump-free.
- Gradually add the dry ingredients to the wet ingredients. Fold gently with a spatula until just combined. Do not overmix.
- Fold in the sugar-free chocolate chips, reserving a few for topping.
- Divide batter evenly among the 12 muffin cups, filling them about ¾ full. Sprinkle reserved chocolate chips on top.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and tops are lightly golden.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Ensure all ingredients (cream cheese, eggs, butter) are at room temperature for a smooth batter. Do not overmix to avoid tough muffins. Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat in microwave for 20-30 seconds.
