  • 2 pounds ground beef (80/20 fat ratio)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup thick BBQ sauce
  • 1215 Hawaiian sweet rolls, sliced horizontally
  • 2 cups smoked cheddar cheese, shredded
  • 2 tablespoons butter, melted
  • Optional toppings: pickles, crispy fried onions, or jalapeños

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. Slice the Hawaiian rolls horizontally in half, keeping the bottom half connected. Set top halves aside.
  3. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon.
  4. Add diced onion and minced garlic to the beef. Cook until beef is no longer pink and onions are soft. Drain excess grease if necessary.
  5. Reduce heat to low. Stir in BBQ sauce and simmer for 2-3 minutes until flavors meld and mixture is saucy but not soupy.
  6. Spread the beef mixture evenly over the bottom half of the rolls.
  7. Sprinkle shredded smoked cheddar generously over the meat.
  8. Bake for 10-12 minutes until cheese is bubbly and slightly browned.
  9. While baking, melt butter in a small bowl. Remove sliders from oven, brush tops with melted butter, and return to oven for 1-2 minutes to toast.
  10. Let cool for 5 minutes before serving to allow cheese to set.

Notes

Use thick BBQ sauce to prevent soggy rolls. Grate your own cheese for better melting. Do not overcrowd the pan to ensure proper air circulation. Can be assembled up to 24 hours in advance and refrigerated.
