  • 1.5 pounds large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, divided
  • 3 medium zucchini, spiralized into noodles
  • 6 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth (low-sodium)
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Pat the shrimp completely dry with paper towels to ensure a good sear.
  2. Spiralize the zucchini into noodles and set aside. Mince garlic and chop parsley.
  3. Heat 2 tablespoons of butter in a large skillet over medium-high heat.
  4. Add shrimp in a single layer and cook for 1-2 minutes per side until pink. Remove shrimp from pan and set aside.
  5. Reduce heat to medium. Add remaining 2 tablespoons of butter to the pan.
  6. Add minced garlic and red pepper flakes, stirring constantly for 30-60 seconds until fragrant but not browned.
  7. Pour in chicken broth and simmer for 1 minute, scraping up browned bits from the pan.
  8. Add heavy cream and Italian seasoning. Simmer for 2-3 minutes until the sauce thickens slightly.
  9. Remove the skillet from heat. Gradually add Parmesan cheese, stirring constantly until melted and smooth.
  10. Toss in zucchini noodles and stir gently for 1-2 minutes until warmed through and coated.
  11. Return shrimp to the pan. Squeeze in lemon juice and season with salt and pepper to taste.
  12. Serve immediately, garnished with fresh parsley and extra Parmesan.

Notes

Pat shrimp dry before cooking to prevent steaming. Use fresh Parmesan, not pre-grated, to avoid a grainy sauce. Remove pan from heat before adding cheese to prevent separation. Zucchini noodles cook quickly, so add them at the end to avoid mushiness.
