Keto Cinnamon Pecan Fat Bombs: 3-Ingredient Cream Cheese Recipe

  • Author: Lisa
  • Total Time: 40 minutes
  • Yield: 12 servings 1x

Description

These no-bake Keto Cinnamon Pecan Fat Bombs are a creamy, crunchy, and low-carb snack that satisfies sweet cravings without breaking ketosis. Made with just a few pantry staples, they freeze beautifully and offer a delicious alternative to traditional desserts.

Ingredients

Scale
  • 8 ounces (225g) full-fat block-style cream cheese, softened
  • 23 tablespoons (30-45ml) heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 34 tablespoons (30-40g) erythritol or monk fruit sweetener
  • 1 cup (100g) pecan halves, roughly chopped
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon sea salt

Instructions

  1. Prep the pecans: Pulse pecans in a food processor until chopped into small, uneven chunks, or chop roughly by hand. Transfer to a mixing bowl.
  2. Soften the cream cheese: Ensure cream cheese is soft at room temperature. Microwave for 10-15 seconds if necessary, but do not melt.
  3. Mix the base: In a mixing bowl, combine softened cream cheese, heavy cream, vanilla extract, sweetener, cinnamon, and salt. Mix with a hand mixer or sturdy spoon until completely smooth with no lumps.
  4. Fold in the pecans: Gently stir the chopped pecans into the cream cheese mixture until evenly distributed.
  5. Portion and freeze: Line a 12-cup muffin tin with paper liners. Scoop 1-2 tablespoons of mixture into each cup and smooth the tops. Freeze for at least 30 minutes until firm.
  6. Store: Keep in an airtight container in the freezer for up to 3 months.

Notes

Use full-fat block cream cheese, not whipped or light varieties. Toasting pecans lightly enhances flavor. If using erythritol, grind it into a powder to avoid grittiness. These are soft at room temperature, so keep frozen until ready to eat. They can be stored in the fridge for up to 2 weeks but will be very firm.
