Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add melted butter and salt to the yeast mixture. Add flour and knead for 5-7 minutes until smooth and elastic. Let dough rise in a covered bowl for 30-45 minutes until doubled.
  3. Bring a large pot of water to a boil, then stir in baking soda. Reduce heat to a simmer.
  4. Punch down dough and divide into 4-6 pieces. Roll into ropes and cut into 1-inch pieces. Roll into rough balls.
  5. Boil pretzel bites in batches for 30 seconds per side until they float. Remove with a slotted spoon and place on parchment-lined baking sheets.
  6. Preheat oven to 425°F (220°C). Sprinkle boiled bites with coarse salt and bake for 12-15 minutes until deep golden brown.
  7. While pretzels bake, melt butter in a saucepan. Whisk in flour to make a roux, then slowly whisk in beer and milk. Cook until thickened.
