Homemade Cinnamon Roll Bread Pudding

  • Author: Lisa
  • Total Time: 60 minutes
  • Yield: 8 servings 1x

Description

A simple, 5-ingredient brunch recipe that transforms stale cinnamon rolls into a creamy, custardy bread pudding with a sticky maple glaze. Perfect for using up leftovers and requiring minimal effort.

Ingredients

Scale
  • 1 package (12-15 rolls) store-bought plain cinnamon rolls (not cream cheese frosted)
  • 4 large eggs
  • 1 ½ cups whole milk
  • 2 tablespoons unsalted butter, melted
  • ½ cup 100% pure maple syrup
  • 2 tablespoons heavy cream
  • ½ teaspoon ground cinnamon
  • 2 tablespoons powdered sugar (optional)
  • 1 teaspoon vanilla extract (optional)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Melt the butter and brush it onto the bottom of a 9×13 inch baking dish.
  2. Cut the cinnamon rolls in half or quarters and arrange them in a single layer in the prepared baking dish.
  3. In a large mixing bowl, whisk the eggs until beaten. Add the milk, vanilla extract (if using), and cinnamon (if using). Whisk vigorously until smooth.
  4. Pour the custard mixture evenly over the cinnamon rolls. Gently press the bread down to ensure it absorbs the liquid. Let sit for 10-15 minutes.
  5. Bake for 40-45 minutes until the top is deep golden brown and the center is set but still has a slight jiggle.
  6. While baking, combine maple syrup and heavy cream in a saucepan or microwave-safe bowl. Heat until warm and pourable. Stir in powdered sugar if using.
  7. Remove pudding from oven and let rest for 5 minutes.
  8. Drizzle the warm maple glaze generously over the top and serve immediately.

Notes

Stale cinnamon rolls work best as they absorb the custard better without becoming soggy. For a make-ahead version, assemble the night before, cover, and refrigerate. Add 5-10 minutes to baking time if baking from cold. Ensure the center jiggles slightly like a custard when done; do not overbake.
