A convenient, high-protein weeknight dinner featuring bell peppers stuffed with seasoned ground turkey, black beans, corn, and cheese. This one-dish meal is customizable, meal-prep friendly, and ready in under 40 minutes.

- 1 pound ground turkey (93% lean)
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1 packet taco seasoning (1 ounce) or 2 tablespoons homemade blend
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn (frozen or canned, rinsed)
- 4 large bell peppers (any color)
- 1.5 cups shredded Mexican cheese blend
- ½ cup chicken broth
- Optional garnishes: fresh cilantro, sliced green onions, sour cream, lime wedges
Instructions
- Preheat oven to 375°F (190°C).
- Wash bell peppers and pat dry. Slice off the top ½ inch and remove seeds and membranes. If needed, slice a tiny bit off the bottom to ensure they stand flat. Place upright in a 9×13 inch baking dish.
- Heat a large skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon. Cook until browned (5-6 minutes), draining excess fat if necessary.
- Add diced onion to the skillet and cook for 2 minutes until soft. Add minced garlic and taco seasoning, stirring constantly for 1 minute until fragrant.
- Stir in drained tomatoes, black beans, corn, and chicken broth. Simmer for 3-4 minutes to meld flavors. Remove from heat.
- Divide the turkey mixture evenly among the four peppers, packing gently. Top each pepper generously with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly and golden. Optionally broil for 2 minutes for extra browning.
- Remove from oven and let rest for 5 minutes before garnishing and serving.
Notes
Ensure tomatoes and beans are thoroughly drained to prevent soggy filling. For softer peppers, microwave them for 2-3 minutes before stuffing. The filling can be made ahead and frozen; bake from frozen adding 10-15 minutes to cooking time. Do not freeze baked peppers as they may become mushy.
