High-Protein Greek Yogurt Chocolate Chip Blondies

  • Author: Lisa
  • Total Time: 35 minutes
  • Yield: 12-16 servings 1x

Description

A simple, 6-ingredient high-protein blondie recipe that uses Greek yogurt for moisture and chewiness. No mixer required, these treats are perfect for meal prep and satisfy sweet cravings with fewer calories than traditional blondies.

Ingredients

Scale
  • 1 cup (240g) full-fat plain Greek yogurt
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (85g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the parchment.
  2. In a medium mixing bowl, whisk together the Greek yogurt, sugar, egg, and vanilla extract until smooth and creamy.
  3. Add the flour, baking powder, and salt to the wet ingredients. Gently fold in with a whisk or spoon until just combined. Do not overmix.
  4. Fold in the chocolate chips (and any other add-ins like nuts) until evenly distributed.
  5. Spread the thick batter evenly into the prepared pan.
  6. Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  7. Let the blondies cool in the pan for at least 10 minutes, then lift them out using the parchment sling and transfer to a wire rack to cool completely before cutting.

Notes

For best results, use full-fat plain Greek yogurt to ensure moisture. Spoon and level the flour rather than scooping to avoid dry blondies. Do not overmix the batter to maintain a chewy texture. Blondies can be stored in an airtight container at room temperature for 3 days or frozen for up to 3 months.
