  • 1 cup (225g) cottage cheese (full-fat or 2%)
  • 2 tablespoons (30g) plain, unsweetened Greek yogurt
  • 2 tablespoons (30ml) heavy cream or whole milk
  • 1 cup (30g) fresh or frozen spinach (thawed and squeezed dry)
  • 2 cloves garlic, minced
  • ½ cup (60g) crumbled feta cheese
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional: ½ cup cherry tomatoes, halved; red pepper flakes; 2 tablespoons whole wheat pita crumbs

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a blender or food processor, combine eggs, cottage cheese, Greek yogurt, and heavy cream. Blend on high until completely smooth with no visible curds.
  3. If using fresh spinach, sauté minced garlic in a small skillet with a little olive oil for 30 seconds. Add spinach and cook until wilted (1-2 minutes). Squeeze out excess liquid thoroughly.
  4. Mix the cooked spinach and garlic into the blended egg mixture.
  5. Lightly grease a standard 12-cup muffin tin with cooking spray or butter.
  6. Divide the egg mixture evenly among the 12 cups.
  7. Sprinkle crumbled feta cheese on top of each cup, pressing down slightly.
  8. Bake for 20-25 minutes until centers are just set and tops are lightly golden. Do not overbake.
  9. Let cool in the pan for 5 minutes before removing gently.

Notes

Blend the cottage cheese until completely smooth for a custard-like texture. Squeeze all excess liquid from the spinach to prevent watery egg bites. Do not overbake, as they will continue to cook from residual heat. For ultra-creamy results, you can use a water bath by placing the muffin tin in a larger roasting pan filled with an inch of hot water.
