Ingredients

  • 1/2 cup creamy natural peanut butter
  • 1/2 cup full-fat or 2% Greek yogurt
  • 1 scoop vanilla protein powder (whey or plant-based)
  • 1 teaspoon vanilla extract
  • 1/3 cup mini chocolate chips
  • 1 pinch salt
  • Optional: 1/4 cup toasted pecans or walnuts

Instructions

  1. Ensure peanut butter is at room temperature; microwave for 10 seconds if cold.
  2. In a mixing bowl, combine peanut butter, Greek yogurt, vanilla extract, and protein powder. Stir vigorously until smooth and creamy.
  3. Add rolled oats and salt to the wet mixture. Stir until oats are evenly coated. Adjust consistency with more yogurt if too dry or more oats if too wet.
  4. Fold in mini chocolate chips (and nuts if using).
  5. Cover the bowl and chill in the refrigerator for at least 30 minutes (or 15 minutes in the freezer) to firm up the dough.
  6. Scoop tablespoon-sized portions of dough and roll into balls between your palms.
  7. Place bites on a parchment-lined plate or container.
  8. Serve immediately for a softer texture or store in the fridge for a firmer bite.

Use old-fashioned rolled oats, not instant or steel-cut. Ensure peanut butter is natural and well-stirred. Chilling is crucial for texture. These can be frozen for up to 2 months. If using plant-based protein powder, you may need slightly more liquid.
