- 8 ounces (225g) ground turkey (93% lean recommended)
- 1 medium sweet potato (about 12 ounces / 340g), peeled and diced into ½-inch cubes
- ½ medium yellow onion, diced (about 75g)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ½ teaspoon chili powder
- 2 tablespoons chicken broth (low-sodium)
- ½ teaspoon salt (or to taste)
- Black pepper (to taste)
- 1 tablespoon fresh cilantro, chopped (optional)
- ½ cup black beans, drained (optional)
- 1 tablespoon feta cheese, crumbled (optional)
Instructions
- Prep ingredients: Dice sweet potato into ½-inch cubes, dice half onion, mince garlic, and mix spices (paprika, cumin, chili powder) in a small bowl.
- Heat olive oil in a 10-inch non-stick skillet over medium-high heat.
- Add ground turkey and break it up with a spatula. Brown for 5-6 minutes until cooked through. Remove turkey from pan and set aside on a plate.
- Reduce heat to medium. Add diced sweet potatoes and onions to the same skillet. Sauté for 4 minutes.
- Add 2 tablespoons of water and cover the pan with a lid or foil. Steam for 3-4 minutes until potatoes are tender.
- Return cooked turkey to the pan. Sprinkle spice mix over everything and add minced garlic. Stir to coat.
- Cook for 1-2 minutes until garlic is fragrant. Add a splash of broth if dry.
- Season with salt and pepper to taste. Stir in optional cilantro or feta. Serve immediately.
Notes
Cut potatoes uniformly to ensure even cooking. Do not skip browning the turkey for flavor. Use the steam trick (adding water and covering) to soften potatoes quickly. This recipe is naturally gluten-free and dairy-free. If using 99% lean turkey, be careful not to overcook. Leftovers can be refrigerated for up to 3 days and reheated with a splash of water.
