Description
A fast, smoky, and rustic summer dessert made by grilling fresh peaches and biscuit dough in a cast-iron skillet. Ready in just 20 minutes, this easy cobbler is perfect for busy weeknights or cookouts.

- 4–5 medium fresh peaches, sliced into wedges
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 can (8-12 oz) refrigerated biscuit dough
- 2 tablespoons butter, melted
- Vanilla ice cream, for serving
Instructions
- Preheat grill to medium-high heat (375°F-400°F). Slice peaches, toss with lemon juice, sugar, and cinnamon, and let sit for 5 minutes.
- Separate biscuit dough into individual rounds or halves. Brush pieces lightly with melted butter.
- Place a 10-inch cast-iron skillet on the grill to heat for 1-2 minutes. Add peach mixture and cook for 5 minutes, stirring occasionally until soft and juicy.
- Arrange buttered biscuit pieces on top of the peaches. Close the grill lid.
- Grill for 8-10 minutes until biscuits are golden brown and puffy. Check at 8 minutes to prevent burning.
- Remove from grill, let cool for 2-3 minutes, and serve warm with vanilla ice cream.
Notes
Use ripe but firm peaches to prevent mushiness. Preheat the skillet for better caramelization. Line the skillet with foil for easy cleanup. Biscuits cook best on top of the peaches to stay moist. Serve immediately as leftovers can become soggy.
