A refreshing, hydrating mocktail made with just three main ingredients: frozen watermelon, fresh lime juice, and simple syrup. Ready in five minutes, this icy treat is perfect for hot summer days.

- 4 cups frozen watermelon chunks (about 600g)
- 1/2 cup fresh lime juice (from 3–4 limes)
- 2–3 tablespoons simple syrup
- Fresh mint leaves (for garnish, optional)
- Lime wheels (for garnish, optional)
- Coarse salt (tiny pinch, optional)
Instructions
- Cut watermelon into 1-inch cubes and freeze on a baking sheet for at least 4 hours or overnight until rock hard.
- Roll limes on the counter to release juices, cut in half, and squeeze to obtain 1/2 cup of fresh lime juice.
- Add frozen watermelon chunks, fresh lime juice, and 2 tablespoons of simple syrup to a high-speed blender.
- Blend on low speed to break up chunks, then gradually increase to high. Blend for 30-60 seconds until the mixture resembles wet sand.
- Taste and adjust consistency or sweetness by adding more lime juice, water, or simple syrup as needed. Blend for 10 seconds to combine.
- Pour into tall glasses and garnish with mint leaves and lime wheels. Serve immediately.
Notes
Ensure watermelon is frozen solid for the best slushie texture; fresh watermelon will require ice which dilutes flavor. Use fresh lime juice, not bottled. Simple syrup blends better than granulated sugar in cold drinks. Serve immediately as the slushie melts quickly.
