Description

A no-cook, fresh peach freezer jam infused with real vanilla bean. This easy breakfast spread captures the vibrant flavor of summer peaches without the need for canning or boiling.


Ingredients

  • 6 cups chopped fresh peaches (about 2.5 kg)
  • 3 cups granulated sugar (600g)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 whole vanilla bean pod, split and seeds scraped
  • 1 box (1.76 oz / 50g) no-cook freezer pectin (e.g., Ball RealFruit)
  • 1/2 cup cold water
  • Optional: 1/2 teaspoon almond extract
  • Optional: 1/4 teaspoon cinnamon

Instructions

  1. Wash peaches thoroughly. Cut in half, remove pits, and chop flesh into rough chunks to yield about 6 cups.
  2. Place chopped peaches in a large mixing bowl. Add sugar, lemon juice, and vanilla bean seeds (and pod if desired). Stir gently to combine.
  3. Let the mixture sit at room temperature for 15-30 minutes to macerate, allowing sugar to draw out juices.
  4. In a small bowl, whisk pectin powder with 1/2 cup cold water until smooth and free of clumps.
  5. Pour the pectin mixture into the macerated peaches. Stir vigorously and continuously for 3 minutes to ensure pectin is fully hydrated and distributed.
  6. Ladle the jam into freezer-safe containers, leaving 1/2 inch of headspace for expansion.
  7. Label containers with date and contents. Freeze immediately for at least 12 hours, though full setting takes 24-48 hours.
  8. Before serving, let the jar sit on the counter for 15-20 minutes to soften to a spreadable consistency.

Notes

Do not use standard cooked pectin; you must use ‘no-cook’ or ‘freezer’ pectin. Do not freeze in glass canning jars with metal lids as they may crack or rust. The jam is very firm when frozen; allow it to soften at room temperature before spreading. Save the used vanilla pod by drying it and storing it in sugar for future baking.
