A crunchy, chewy, and salty-sweet game-day treat featuring caramel-coated popcorn drizzled with dark chocolate and finished with flaky sea salt. Easy to make and perfect for parties.

- 10–12 cups plain popped popcorn (about 150g unpopped kernels)
- 4 tablespoons (60g) unsalted butter
- 1 cup (200g) light brown sugar
- ½ cup (120ml) heavy cream
- 1 teaspoon pure vanilla extract
- ½ teaspoon kosher salt
- 2 cups (340g) dark chocolate chips (60-70% cocoa)
- 1 tablespoon (15ml) coconut oil
- Flaky sea salt (for finishing)
Instructions
- Prep the popcorn by placing it in a large mixing bowl and removing any unpopped kernels.
- In a large saucepan over medium heat, melt the butter. Add the brown sugar and stir until combined.
- Add the heavy cream and ½ teaspoon kosher salt. Stir constantly and bring the mixture to a boil.
- Once boiling, set a timer for exactly 3 minutes and stir continuously. Do not walk away.
- Remove from heat and stir in the vanilla extract.
- Pour the hot caramel sauce over the popcorn and immediately toss to coat evenly using two wooden spoons or a large spatula.
- Spread the coated popcorn onto a parchment-lined baking sheet and let it sit for about 15 minutes to set slightly.
- Microwave the dark chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth and glossy.
- Drizzle the melted chocolate over the caramel popcorn.
- While the chocolate is still wet, sprinkle flaky sea salt over the top.
- Let the clusters cool completely at room temperature for 20-30 minutes until the chocolate hardens.
- Break the clusters into bite-sized pieces while they are still slightly warm.
Notes
Ensure the caramel boils for the full 3 minutes to soften the popcorn properly without burning. Work quickly when coating the popcorn as caramel sets fast. Store in an airtight container in a cool, dry place to maintain crunchiness. Humidity is the enemy of this recipe.
