Ingredients

  • 1012 cups plain popped popcorn (about 150g unpopped kernels)
  • 4 tablespoons (60g) unsalted butter
  • 1 cup (200g) light brown sugar
  • ½ cup (120ml) heavy cream
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon kosher salt
  • 2 cups (340g) dark chocolate chips (60-70% cocoa)
  • 1 tablespoon (15ml) coconut oil
  • Flaky sea salt (for finishing)

Instructions

  1. Prep the popcorn by placing it in a large mixing bowl and removing any unpopped kernels.
  2. In a large saucepan over medium heat, melt the butter. Add the brown sugar and stir until combined.
  3. Add the heavy cream and ½ teaspoon kosher salt. Stir constantly and bring the mixture to a boil.
  4. Once boiling, set a timer for exactly 3 minutes and stir continuously. Do not walk away.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the hot caramel sauce over the popcorn and immediately toss to coat evenly using two wooden spoons or a large spatula.
  7. Spread the coated popcorn onto a parchment-lined baking sheet and let it sit for about 15 minutes to set slightly.
  8. Microwave the dark chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth and glossy.
  9. Drizzle the melted chocolate over the caramel popcorn.
  10. While the chocolate is still wet, sprinkle flaky sea salt over the top.
  11. Let the clusters cool completely at room temperature for 20-30 minutes until the chocolate hardens.
  12. Break the clusters into bite-sized pieces while they are still slightly warm.

Notes

Ensure the caramel boils for the full 3 minutes to soften the popcorn properly without burning. Work quickly when coating the popcorn as caramel sets fast. Store in an airtight container in a cool, dry place to maintain crunchiness. Humidity is the enemy of this recipe.
