  • 1 cup (240ml) milk (whole milk or buttermilk)
  • 2 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Butter or oil for greasing the pan
  • Maple syrup for serving

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.
  2. In a separate bowl or measuring cup, whisk the egg, milk, melted butter, vanilla, and sourdough discard until smooth.
  3. Pour the wet mixture into the dry ingredients and gently stir with a spatula until just combined. Do not overmix; lumps are acceptable.
  4. Let the batter rest for 5 minutes to allow the flour to hydrate and leavening agents to activate.
  5. Heat a non-stick skillet or griddle over medium heat. Test readiness by sprinkling water drops; they should dance and evaporate quickly.
  6. Lightly grease the pan with butter or oil. Pour ¼ cup of batter for each pancake, leaving space between them.
