- 2 large eggs
- 1 tablespoon butter
- 1 tablespoon heavy cream or whole milk
- Kosher salt and freshly cracked black pepper
- 2 slices thick-cut white sandwich bread or brioche
- 2 slices American cheese or ¼ cup shredded cheddar
- Optional: ham, bacon, spinach, or tomato
Instructions
- Crack eggs into a small bowl, add cream/milk, salt, and pepper. Whisk vigorously until uniform.
- Place an 8-inch non-stick skillet over medium-low heat and melt the butter until it foams gently.
- Pour egg mixture into the pan. Let sit for 10 seconds, then gently push cooked edges to the center, tilting the pan to let uncooked egg flow into empty spaces. Fold gently until soft and custardy.
- Toast bread in the pan with butter or in a toaster until golden brown.
- Slide eggs onto one slice of bread. Immediately place cheese on top of the hot eggs to melt.
- Top with the second slice of bread, press gently, and serve immediately.
Notes
Keep heat on medium-low to ensure fluffiness and prevent rubbery eggs. Take eggs off heat when they still look slightly wet as they will continue to cook from residual heat. Butter the bread to create a barrier against sogginess. Do not freeze this sandwich as eggs will become watery upon thawing.
