Description
A smooth, less acidic homemade cold brew concentrate infused with cinnamon and topped with a sweet, velvety maple cream foam. This recipe offers a customizable, coffee-shop-quality drink with zero active cooking time.
Ingredients
Scale
- 1 cup (85g) medium-dark roast coffee beans, coarsely ground
- 4 cups (950ml) cold filtered water
- 2 whole cinnamon sticks
- 1/2 cup (120ml) heavy cream, very cold
- 1 tablespoon real maple syrup (Grade A or B)
- 1/2 teaspoon vanilla extract
- Pinch of ground cinnamon
- Ice for serving
- Water or milk for diluting concentrate
Instructions
- Combine coarsely ground coffee and cinnamon sticks in a large jar or pitcher.
- Pour in cold water and stir gently to ensure all grounds are saturated.
- Cover the jar and place it in the refrigerator to steep for 12 to 24 hours (18 hours is recommended).
- Strain the concentrate through a fine mesh strainer lined with a coffee filter or nut milk bag into a clean container to remove grounds and cinnamon.
- In a small bowl or milk frother, combine cold heavy cream, maple syrup, vanilla extract, and a pinch of cinnamon.
- Whisk or froth the cream mixture until it doubles in volume and forms soft peaks.
- Fill a glass with ice and pour in the cold brew concentrate diluted with water or milk (ratio of 1:1 or 1:1.5 depending on strength preference).
- Slowly pour the sweet cream foam over the top of the coffee.
- Garnish with a tiny sprinkle of cinnamon and serve immediately without stirring initially.
Notes
Use coarse grounds to prevent bitterness and ease straining. Keep cream ice-cold for best whipping results. The concentrate lasts up to two weeks in the fridge, but the foam should be made fresh. Do not heat cold brew; it is meant to be served cold.
