- 6–7 medium apples (about 3 lbs), peeled and sliced into ¼-inch wedges (mix of Granny Smith and Honeycrisp/Gala)
- 2 tablespoons lemon juice
- ½ cup granulated sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon arrowroot powder or cornstarch
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- ½ cup cold unsalted butter, cubed
- ½ teaspoon sea salt
- 1 teaspoon extra cinnamon
- ½ cup chopped pecans or walnuts (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- In a large bowl, toss sliced apples with lemon juice, granulated sugar, cinnamon, nutmeg, vanilla, and arrowroot powder until evenly coated.
- Spread the apple mixture evenly into the prepared baking dish.
- In a medium bowl, combine rolled oats, flour, brown sugar, sea salt, extra cinnamon, and nuts (if using).
- Cut the cold, cubed butter into the dry ingredients using a pastry cutter, fork, or fingers until the mixture is crumbly with pea-sized clumps.
- Spread the topping loosely and evenly over the apples. Do not press down.
- Bake for 45-50 minutes, or until the topping is golden brown and juices are bubbling around the edges. Tent with foil if browning too quickly.
- Remove from oven and let cool for at least 15 minutes to allow the filling to thicken before serving.

Use cold butter for a flaky, crisp topping. Ensure apples are sliced uniformly for even cooking. Let the crisp cool for 15 minutes before serving to prevent a soupy texture. For gluten-free, use GF flour and oats. For dairy-free, use vegan butter.
