  • 67 medium apples (about 3 lbs), peeled and sliced into ¼-inch wedges (mix of Granny Smith and Honeycrisp/Gala)
  • 2 tablespoons lemon juice
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon arrowroot powder or cornstarch
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • ½ cup cold unsalted butter, cubed
  • ½ teaspoon sea salt
  • 1 teaspoon extra cinnamon
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, toss sliced apples with lemon juice, granulated sugar, cinnamon, nutmeg, vanilla, and arrowroot powder until evenly coated.
  3. Spread the apple mixture evenly into the prepared baking dish.
  4. In a medium bowl, combine rolled oats, flour, brown sugar, sea salt, extra cinnamon, and nuts (if using).
  5. Cut the cold, cubed butter into the dry ingredients using a pastry cutter, fork, or fingers until the mixture is crumbly with pea-sized clumps.
  6. Spread the topping loosely and evenly over the apples. Do not press down.
  7. Bake for 45-50 minutes, or until the topping is golden brown and juices are bubbling around the edges. Tent with foil if browning too quickly.
  8. Remove from oven and let cool for at least 15 minutes to allow the filling to thicken before serving.

Notes

Use cold butter for a flaky, crisp topping. Ensure apples are sliced uniformly for even cooking. Let the crisp cool for 15 minutes before serving to prevent a soupy texture. For gluten-free, use GF flour and oats. For dairy-free, use vegan butter.
