  • 4 salmon fillets (about 6oz each / 680g total)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice (freshly squeezed)
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper (freshly cracked)
  • ¼ teaspoon red pepper flakes (optional)
  • Lemon wedges and extra fresh dill for garnish

Instructions

  1. Pat salmon fillets dry with paper towels to ensure a good sear.
  2. In a small bowl, whisk together olive oil, smoked paprika, minced garlic, chopped dill, chopped parsley, lemon juice, salt, pepper, and red pepper flakes until smooth.
  3. Place salmon fillets in a shallow dish and spoon the marinade over the top, spreading it evenly. Let sit for 5-10 minutes while heating the grill.
  4. Heat a grill pan or outdoor grill to medium-high. Ensure the surface is hot and lightly oiled to prevent sticking.
  5. Place salmon on the grill, skin-side down (if skin-on). Cook for 3-4 minutes without moving it until the color changes halfway up the side.
  6. Flip the salmon carefully with tongs and cook for another 2-4 minutes, or until the fish flakes easily with a fork but remains slightly juicy in the center.
  7. Transfer salmon to a plate and let rest for 1-2 minutes before serving with lemon wedges and extra herbs.

Notes

Do not overcrowd the pan to ensure proper searing. Use the ‘flake test’ with a fork to check for doneness. Fresh herbs are preferred over dried for better flavor. If using frozen salmon, thaw completely and pat very dry. Do not marinate for more than 30 minutes to avoid the acid ‘cooking’ the fish.
