Description

  • 1 small yellow onion, finely grated
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons breadcrumbs or Panko
  • 8 burger buns (brioche, potato, or sesame seed)
  • 8 slices cheese (American, cheddar, or pepper jack)
  • Toppings: lettuce, tomato, pickles, red onion, bacon, avocado, mayo, ketchup

Instructions

  1. In a large mixing bowl, combine ground beef, grated onion, minced garlic, Worcestershire sauce, Dijon mustard, breadcrumbs, salt, pepper, and paprika. Mix gently with hands until just combined; do not overmix.
  2. Divide the meat mixture into 8 equal portions. Shape each into a patty about 3/4-inch thick, making a slight indentation in the center with your thumb to prevent puffing.
  3. Preheat grill to medium-high heat (approx. 400°F / 200°C). Clean grates and lightly oil them to prevent sticking.
  4. Place patties on the grill. Do not move for 4-5 minutes to allow char to form and patties to release from grates.
  5. Flip patties and cook for another 4-5 minutes. If adding cheese, place a slice on each burger during the last minute and close the lid to melt.
  6. While burgers cook, toast buns cut-side down on the grill for 1-2 minutes until golden and crisp.
  7. Check internal temperature with a meat thermometer; aim for 160°F (71°C).
  8. Let burgers rest for 2-3 minutes before serving to redistribute juices.
  9. Assemble burgers with toasted buns, cheese-covered patties, and desired toppings. Serve immediately.

Notes

Keep the meat cold until cooking to prevent greasy burgers. Do not press down on patties while cooking as this squeezes out juices. Grating the onion instead of chopping it ensures even distribution and moisture. If using 90/10 beef, add a tablespoon of olive oil to the mix. For gluten-free option, use gluten-free breadcrumbs and buns.
